What exactly is a microgreen?

A microgreen is a young seedling harvested 7 to 21 days after germination, at the cotyledon or first true leaf stage. According to a study published in the Journal of Agricultural and Food Chemistry (Xiao et al., 2012, USDA), microgreens concentrate up to 40 times more vitamins (C, E, K, beta-carotene) than their mature counterparts at comparable weight.

How long can microgreens be stored?

5 to 7 days refrigerated (4-6°C) for the pre-cut format. Substrate-grown microgreens last longer — up to 10 days — because the plant remains alive until cutting.

What cultivation method is used?

Chef's Origin grows its microgreens in a hydroponic vertical farm under controlled-environment agriculture: temperature, humidity, photoperiod and LED light spectrum are calibrated per species. According to FAO reports on urban agriculture, this method uses about 95% less water than conventional agriculture, without pesticides or GMOs.

Are microgreens sold on substrate or pre-cut?

Both formats are available. Substrate-grown microgreens (coconut fiber or organic potting mix) stay alive and last up to 10 days; pre-cut microgreens are ready to use for immediate plating during service and last 5 to 7 days refrigerated.
